    Pacific Albacore

Looks really good. Let us know how it tastes. A couple of weeks ago I went out of SF for striped bass, caught seven, bag limit is two. I smoked one fillet, was good, but I still prefer salmon, then rock cod. Thanks for sharing, Matt aka Rocky

    Cheesy ABT's

Just a suggestion, soften up the cream cheese to room temp, shred your other cheese(s) you want in it, add the crumbled cooked sausage, mix by hand or use a hand mixer to mix up. You could put into a cookie/icing press and fill. So many ways to do ABT's... in the end all is good! Matt aka Rocky

    Deadwood seasoning question

If the tree is still standing, not completely dead... I would think you would need to season it the full time. You can quicken the time by cutting in to chunks, and make a kiln, but to most that would be not worth it. Might quicken it up if you have a convection oven, and put wood in there...

    spare ribs question

Just did two racks yesterday, 3-2-whatever @ 225... Foiled with half apple juice/apple cider vinegar, and firmed up the last portion, this time was half hour. Rubbed two hours before using Tulsa Jeff's rub, no sauce during the cook, only for dipping. They were fall off the bone and moist...

    OK, what happened?

LMAO... Thanks Mikey for the morning laugh!!! I have had shoulders that were stubborn, and at 16 hours doing about the same as yours... There are only so many hours in a day for a smoke, and at 16 hours I took it out and put it in the oven set at 200 degrees and went to bed. Since the oven is...

    Crab Apple Prunings? Grape vines?

If you leave the tree, there is always a use Ingredients: (for 1 quart)4 quarts crabapples 4 cups sugar 3 cups vodka Procedure: Take a 4 quart mason jar, and fill it with crabapples that have been washed and quartered (you could take the stems and cores out, but it makes no difference and is...

    New MES (Father's Day)

Congrats on the MES, I enjoy mine. I have a bag for my chipper shredder, and have used it to make chips. To quicken up the seasoning process, when you are planning on a smoke without the water pan, or not smoking at all place aluminum screen material on your grills and use your smoker as a kiln...

    Baby Backs Vs Spares

I like BB's but not for the price. I like spares, I like St Luis,... Hey I like smoked meat (and FOOD) of all kinds. For the price, I will pass on BB's, only reason they are so expensive is the restaurants eat them up, making less available in the market place. Yes they are delicious, but then...
