    Target Temp for a Mother's Day Tri-Tip

    Gonna smoke a 2.5 lb tri tip tomorrow. Jeff's recipe suggests a target temp of about 225-250. Other sites online suggest about 140-150 for medium rare. Am I missing something here? I don't want to over cook it! My future mother in law is coming over for lunch and the pressure is on to deliver!

    I prefer Mirror Pond Pale Ale if I want something with flavor. If I am looking to consume copious quantities of meat and beer, i will step it back a bit, usually to miller lite.

    1st Q-View--Stuffed Pork Loin

    Brined for a couple of days, stuffed with prosciutto, spinach and swiss, dusted with rub, end product delicious! I hope the pictures work. My buddy said it was the best pork he had ever had. This was my first attempt at smoking a pork loin and it came out perfectly. Leftovers tonight!
