    Yes Mike, previous batches last spring and late summer were in the 80 - 87F range and the cheese did sweat just a tad bit. But it also showed a LOT more color at 2 hrs running at those temps than this batch is at 3, going on 4 hrs now. So my gut tells me that cold temps don't lend to the deep...

    Keep the smoke light n' blueish, keep the temp under 240F, and when the internal temp hits 190-205F (use a probe thermometer) pull that butt, wrap in foil or set it in a an empty crokpot with the lid until the internal temp drops to like 130ish. Then pull n' pig out!

    OK! I tried this over the weekend... I made a 3 cup sized batch of "Geoff's disrobed pork massage" and added about 2 heaping tablespoons to the mix. I think It improved it ever so slightly... Im gonna try double the amount each consecutive time until it starts to overpower the other ingredients...
