    Come to the conclusion

From what I've read, the Brinkman smokers need some Mods done to the firepan. I have an ECB, that I had the same problem (could not get enough heat). It has no air holes in the firepan. that may part of your part of your problem as well.

    Even newer than new...

Welcome aboard Jay, I too am new to smoking, but with all the available information on this site it didn't take long to turn out some good grubb. I also have a GOSM that I bought in December. It is very easy to maintain your temps, and is a good unit to start out on. I do recommend the 5 day...

    GOSM running to Hot?

I have a GOSM gasser, and I usually have to run my control between low and medium. I have not tried to see how low it will go, but I know that it will cruise below 200. Also, I haven't done any mods. I did a smoke this weekend, and the outdoor temps were in the mid 50s. It still did ok, plus it...

    GOSM or Vault?

I can't make a comparison between the two, but I do like my GOSM. Maybe someone will come along who has experience with both of them, and give a good comparison. http://www.walmart.com/catalog/product.do?product_id=3342508 I purchased mine from Walmart online, and I received it about one week...

    Jamaica Sunset

The weather was warm for sure, actually a little warmer than I cared for. I boarded the plane in Atlanta, and it was 34 degrees, snowing and very windy. 2-1/2 later when we stepped out of the airport, it was 88 degrees, sunny and very humid. The temps were in the mid to upper 80s each day, with...

    Jamaica Sunset

I know that this has nothing to do with cooking, but I spent all of last week in Jamaica. I took this picture just before sunset in Montego Bay, and thought that some of you would enjoy it.

    Rookie Smoker

Hi and welcome to the site. I'm also pretty new, and don't have much experience in smoking. But I have a propane GOSM, and I love it. It has worked out really good for me because it is easy to maintain the desired temperature. And so far, I have not ruined any food. However, I have already...

We have not had too bad of weather so far. The wind was kind of annoying yesterday, but no storms to speak of.

    Fire!!!!

I have a GOSM also, and I first tried a cast iron skillet. The skillet took too long to produce smoke. I then took the coffee can route, the much thinner metal will produce smoke a lot faster. And although it is still possible to catch your wood on fire, (because I did once) you should be able...

    Yuck

Thanks guys. My past couple of attempts had turned out great, with just the right amount of smoke (for my taste). But this one was a little bitter. I figured it was when the wood caught fire, the temp started up and the smoke was billowing.

    Yuck

While smoking a piece of pork loin this weekend, my wood caught fire and flamed up for a few minutes before I could correct it. The meat was ok other than the bark, which was a little bitter. I noticed a little of the black creosote inside the smoker after I had finished. My question is, will...
