I made some of these the other week and didn't have any bacon on hand so did them without. They were good but would have been better with the bacon.
Once they're on the racks don't touch them until they are done, then you can move them to a plate.
Mine held together just fine.
I haven't did any of these yet, but I don't see any reason why you couldn't do them on the MES.
He said in video to do them around 300* for an hour.

I've been using the dried ones to boil, and have been boiling them hard for 3 hrs then I turn off the heat and let them soak for 3-4 hrs tasting the whole time.
They aren't mushy that way.

Something else is DO NOT use them together ( MTQ and cure #1) in the same recipe!!!! Use one or the other and use only the specified amounts according to weight.
