I dont ice bath my sticks either. From what I understand ice bathing can reduce the amount of shrinkage and wrinkling in your sticks resulting in a plumper stick. I like mine wrinkled so I dont bother with the bath. -

Pork Shoulder/Butt injection & bark
I inject all of my pork butts. Applying the rub 24 hours in advance will help with the bark formation. You can also apply extra rub before putting it in the smoker. I get plenty of bark on my butts/shoulders. -

I do. I purchased a Vivo about 6 months ago and have run a few hundred pounds of sausage through it. Its a solid performer and i have not had any issues with it. The replacement plunger gasket is a bit pricey at about $7 but I purchased one in case I need it in the future. So far I havent needed...
