I can't really speak to how well the intake works since I just built it. I did however just shut her down after 6 hours at a pretty steady temp. The only real fluctuation I encountered was if I took the lid off. If I did that the temp spike a good 25-50 depending on how long I had the lid off...
Well I have had it running for a couple hours now. I see now what people mean by temp spikes after removing the lid. It's amazing how that works. I know there will be a learning curve but I can tell already how much nicer it will be to cook on this compared to the CSP.
I've got 15 racks of BBRs...
Man I just had my buddy weld up a charcoal basket for me. I used the bottom grate from a Weber 22" grill. The grate is 17" in diameter. I used 12" tall expanded metal. This thing is huge! I think I should have gone smaller .
OK some more progress. I still need to decide where I'm going to put a t-stat or two. My buddy should have the charcoal basket welded together for me by tomorrow so I can do a test run on Saturday.
And here are a couple rib racks I'll be using to do ribs for the family this Sunday. The...
Thanks Dave but the draft door (BGE air intake vent) is already installed. I'm not sure you understand what it is so here's some pictures.
And here are the rib racks. The first picture is the Traeger the second is a different brand.
Well I just finished drilling the holes for the grates and draft door. A buddy of mine is welding together the charcoal basket for me today. I'll let everyone know how it works out.
I am nearing completion of my first UDS. I plan to use it to smoke baby back ribs for around 20 people this coming Sunday (Easter). I have 15 racks sitting in the fridge right now. I bought a Traeger 8 slot rib rack and another that holds 6. My question is not whether they'll fit because I...
OK guys I finally got around to starting my SS UDS. I have a bunch of people coming over next Sunday for Easter. That lit a fire under my butt to get the UDS done. I want to do some baby backs and a few other things for the get together.
I decided that I was going to follow in the footsteps of...
Thanks. Yeah, I made thumbs instead because I didn't want to take up too much bandwidth for those with slower connections. Also I wasn't sure what the size limit of pics I can post here. The originals are 12MP!
Just finished up some chicken quarters and a beer can chicken on the Char-griller. Everything came out wonderful. I did have a heck of a time keeping the temp up above 225 though. I can't wait to get my UDS built so I don't have to babysit the smoker!
Anyway, here's my first attempt at some...
Thanks for the replies everyone. I'm stoked to get to work on it. I'm still in the "how exactly am I gonna do this" phase though. I measured the top and a Weber kettle lid will be too small. The OD of the drum is like 33+1/8". I might have to fabricate a lid and it seems that it may be better to...
I was talking with a friend the other day about making one of these cool "UDS" smokers I saw on this BBQ forum. As fate would have it his neighbor had recently given him 2 Food Grade SS 55 gallon drums to make a regular grill. He told me he only needed one of them and offered the other one to...
Thanks, I was aware of that. I am in the Tampa Bay area of Florida so I'm about as close to sea level as I'm gonna get. If I'm not mistaken one also needs to use distilled water since different minerals and such will affect the boiling point.
In any event I am more curious as to why one of the...

I just got two of these exact same thermometers for my CGSP and just finished the boil test. One seemed very accurate (only a slight twist of the screw to get it dead on) while the other was about 20 degrees higher. I tried adjusting it with the screw but I wonder how many turns it should take...
