    I used Stubs BBQ Rub for the rub and moped it with some Lea & Perrins. Smoking with apple wood. Added a little Lea & Perrins to the foil as well. Smells really good.

    Got my Trailmaster about a month and a half ago and this is my first Brisket. Rubbed it last night and let it sit overnight. Hit the rack at 8:00 AM After 2 hrs: After 5 hrs: Currently stalled at 160*

    SFB Minion Method - Am I doing something wrong?

    Well - I packed the basket tightly trying to avoid gaps between lumps, and only used 1/4 chimney to start it, but it still rocketed up to 300. There must be air leaks in the Fire Box, or I just need to use less unlit lump. So I'll hit it again with calk and see what happens.

    Estimate a minimum of 2 hrs per lb. But that's just a guideline. It's all about the temperature with Pork Butt. I would start out at 225 - 250* and go from there.     I got the Trailmaster about a month or so ago and have done 5 smokes on it. There are some Mods you will have to do like seal the firebox, lower the chimney, to grate level, make a coal bin and add a baffle between the firebox and the smoke chamber to avoid a really HOT spot near the firebox...
