Great looking smoker. You will really like the grill feature on the top of the firebox. My LoneStarz smoker has one and it is awesome for doing a reverse sear.
Brats are done and gone! They were delicious... didn’t use high temp cheese in the cheddar/jalapeño brats and had some cheese melt but other than that they were both very good.

Snack sticks were on the smoker at 130° for about an hour and a half. Just pulled them and now in the oven to finish. Ramping up temps by the hour to 170°.
Kicked the temps up on the smoker and now the brats are on for about 45 minutes of smoke before finishing them over the coals.
I took advantage of the sale at Dicks and purchased an LEM 5 lb stuffer. Ordered on Thursday evening and had it Saturday evening. I couldn’t wait so I planned a sausage day today. On the list was my first try at brats and some Hi Mountain snack sticks.

I just melted one of my cheap thermometers the other day. So, perfect timing for a new one. I’ve been reading about the Inkbirds and I’m impressed! I’d use it every time I smoke. I’m located in the state of Ohio in the U.S.A.
You have options. Wrap and bump temp and leave in the smoker. Or you could wrap and move them into your oven. Either way you will not be picking up any more smoke. Sounds like they have been on long enough that they already have plenty.
I think you will like the smoked/braised chuck. That is what I do with my barbacoa. In fact, I’ve got some in the oven right now... Like the looks of your cook!

We like to make Shepard’s Pie, Beef and Noodles, Nachos, Breakfast Beef Hash, and Stroganoff to name a few. Could also add to eggs for an omelette. Wrap in a wonton with cheese, onions and deep fry. Wrap in dough with cheese and potatoes and make peroges. The list could go on and on...

I like having smoked chuckies in the freezer too. Smoked 7 chuckies last time the smoker was a smokin. Sandwiches and tacos in the future. Like for sure!
