In the last week I have watched a couple shows on the tube which showed delis making pastrami....
All the curing and brining seemed to fit right in with what I know about making pastrami.....
The puzzling part was how they heated it prior to slicing.....think they mentioned "steam bath", but...

It just got me to thinkin....I almost always add honey ( 1/4 cup honey to 1 cup sauce) to my sauce to give it a nice glaze. Why not maple syrup of some type ???

I'm not a Walmart lover or a hater....but....ANYONE can send out a list and say that it is a list of facts.....who says these are really facts...everyone should know you can't believe everything you read...so with that said....what are we to believe...has anyone researched these so called facts...

Here is my second installation this time on my Brinkmann gas conversion....there were no threaded fittings on the hose just hose clamps....so needed different adapters for valve......these adapters also were bought at Home Depot......hose clamps are of your own choice....

Have you looked at this one......$10 cheaper....all cast iron.....30-35,000 BTU....self -igniter....two burners that can be operated seperatelly (small and large) and the controls are far enough away from the burner that as you can see from my pic they can be outside the smoker.....check out...
The meat came from Sam's club and was labeled a flat.....would this be a normal with Sam's club meat...I have heard conflicting comments about the same....?
Guess I will just have to be more careful next time in choosing.... !!!

Here's how it went down.....approx. 3lb. CB.....smoker temp 250*.....cherry and apple smoke pellets.....smoked for 5 hrs. to reach 165* internal temp.
Wrapped in foil after spraying with apple juice and then into an oven (250*) for about 4 hrs. until an internal temp. of 205* was reached...I...
Haven't used it myself yet, but know that DJ from DJSmoke Pit does recomend it and has quite a few recipes for injections using apple sauce.

If anyone had any doubts about that stuff in the bottle that was squirted on the ribs by several of them in past shows....Lee Ann certainly cleared that up...!!! Got to try that on my spares !!!

After I had taken this pic, I realized it looked like my GOSM was hooked up in the "Intensive Care" Unit.....
It had been running a high temperature for about 5 hrs. !!! LOL

Haven't tried measuring the low temp yet, but I have turned the flame down to about 1/2 the size I get with the original control.....having done that, I have fanned the flame....blown on the flame and without really making an effort could not get the flame to blow out.

Just finished my second smoke since installing a needle valve on my GOSM.....originally was to help the low end come summer time.....but what a great mod.!!! The ability to fine tune your temps. is unbelievable.....wish the the GOSMs came with a control valve like this..if you've been thinking...
Not trying to get any folks uptight..but what's the bit with the UDS ?
I see a lot of effort by a lot of folks trying to build one of these.....searching out parts and etc.
Let's see now.......they are ugly (not too though!)
