    2 Butts on the Smokin-it #3

Thank ya'll.. We took some pp to a sick friend and her family, and had sandwiches with slaw and  bbq beans as well. I was sure proud we had it because the weather turned wet and bad then we lost power yesterday afternoon and well into the night.. To top it all off, we had to do unexpected cow...

    2 Butts on the Smokin-it #3

I smoked 2 butts yesterday on the #3.  They weighed about 6 and 7 lbs and smoked at 225  for about 12 hrs till 195 IT. They were moist and very tender with a light smoke flavor. I may use more wood next time though. I love the tender shredded meat.  I did brine overnight in a cure/garlic powder...

New to smoking, hoping for some equipment advice

I have a Smokin-it model 3 which is the large size but they make 2 smaller sizes. The food is smokey and delicious but uses very little wood. It is just efficient. I will try and post a picture of the small amount of smoke it generates. Basically, I use only about 2 -4 oz of wood, yes that is...

my version of Memphis style Q sauce

Thanks Joe!  I made a small version and left out the  sherry, ginger and allspice- didn't have it.  I grated the onion so I could use a bottle with a spout..It is good - some heat, some sweet and some vinegar-  I am pleased with this sauce! Like  the quote from "The Lord of the Rings" "It's mine...

    Trying Butt in Smokin-it #3

Thank you SmokinHusker.  I put the butt in the dish at 186 and removed the probe then for some reason . Almost all fat had cooked off at that time though so I think I ended up in the neighborhood of 5 lbs cooked meat.. The following hr in the smoker the temp rose but not sure how much. Letting...

    Trying Butt in Smokin-it #3

I  decided to leave the smokin-it closed and only opened it to place the meat in a  covered dish while I did some work . It stayed in the smoker at 225 for about 7 hrs and the last additional hr was spent in the pyrex  dish with a lid.. The meat is very tender and moist with a nice bark.  The...
