    Doin a pork butt

I agree with Cliff. Again, I think it's just a personal choice or one that you're use to. I cook my butts hot and fast also. I did 3, 8-9# butts a couple of Saturdays ago finished in 7.5 hours....sure beats 20 hours. MULTIPLE BBQ Championships have been won cooking hot and fast..aka Myron Mixon.

    Can I be oversmoking?

The amount of smoke is a personal choice. Regardless of how much, it has to be a clean smoke.

Smoking Beef . . .in general.

Lots of issues (so to speak) with your post. 2.5 lbs for 5 hours IS way, way over done!! I did 30 lbs NewYears in 2.5 hours at 250 degrees. I would suggest you do a search on here for Prime Rib, you will find the info you need to try it again. Afterwards, your opinions will change I bet.

Ribeye roast - smoke it or bake it????

Wrapping it in foil will help shorten the length of time of the stall. Smoking at a higher temp will help shorten the...

    What's your biggest BBQ challenge?

For me, my biggest challenge is fish. The few times I have done it, it always turned very dry.

How to get A-MAZE-N-PELLET-SMOKER to work as advertised???

I have a 12" tube and I haven't had any problem that others describe. I use a blow torch to light, holding it on the pellets for about 30 sec until the flames hold. Let it flame for about 30sec. then blowout.

Great looking Brisket and great info. Thanks for sharing, but I think you missed out not making burnt ends from that point.

    Boston Butt for Mardi Gras

19.5 hours for a 9lb butt is a long time. What temp were you smoking at? What smoker? Looks great though! Nice bark!

    Wine question.

Use a large screw and a pair of pliers. ;) I like it chilled.
