I agree with Cliff. Again, I think it's just a personal choice or one that you're use to. I cook my butts hot and fast also. I did 3, 8-9# butts a couple of Saturdays ago finished in 7.5 hours....sure beats 20 hours. MULTIPLE BBQ Championships have been won cooking hot and fast..aka Myron Mixon.
Lots of issues (so to speak) with your post. 2.5 lbs for 5 hours IS way, way over done!! I did 30 lbs NewYears in 2.5 hours at 250 degrees. I would suggest you do a search on here for Prime Rib, you will find the info you need to try it again. Afterwards, your opinions will change I bet.

I have a 12" tube and I haven't had any problem that others describe. I use a blow torch to light, holding it on the pellets for about 30 sec until the flames hold. Let it flame for about 30sec. then blowout.
