    You are correct Bear.  Salmon is a great fish for smoking.   I als like trout just about every way I've had it.  I've had some salmon paddies for instance that were oh so bad!!!  LOL

    Question about cold smoking peanuts and almonds

    So I put some roasted almonds in for about 2 1/4 hours with Hickory, put them in a zip bag for a couple of days.  Tried them today and they ain't half bad.  Not great but my wife & I will eat them. With out a salt or sugar component, the almonds are a bit dry. Oh well it was worth a try

    I was doing some cheese "cold smoke"  and I had some room, so I tossed in some factory roasted almonds, "Sam's right out of the bag".  I plan on leaving them in for a couple of hours. I'll let you know in a bit how they came out. JD

    Hi Hundet, I too have a MES 40. I don't use chips, but I do use the biggest chunks I can squeeze into the box and it works much better. I also use Todd's 5x8 pellet smoker when I want more smoke or to cold smoke. I leave all my vents the same, but I pull out the chip filler about an inch...
