Yep i agree with Rich on this, you do have to allow for the extra heat the lump has. I've been grilling with R.O all summer and i prefer it once i got thru the learning curve.
Now my local wallyworld has quit stocking R.O so i guess i'll be using Kingsford Charwood as a back up. Can get that at...

I used to live in Maidstone, Kent before i moved to the U.S. You should be able to get plenty of apple wood easy enough over there. Also check into pear, cherry etc.... I know Kent had plenty of fruit orchards...
Have to agree with smokin nutz, Hickory park in ames is a darn good place for eats and is worth a visit if passing by on I35 ... highly recommend the "saucy southener".

Agree here too, warming them on the grill will ensure a crispy skin too. I smoked some chix 1/4's at around 280 -300 and the skin was like chewing a piece of leather.

Boy was just looking at the rubbermaid site, that stuff is not cheap. Think i'll have to get something built myself for a fraction of the cost. Although think i have the same issue as foust of having a large project list.
I hear ya on this subject. The wife has let me have one drawer in the kitchen and yes it's a bottom drawer.
Now a few nigths ago she was looking for some kebab skewers and seh tells me MY drawer is too full!!! So now i want something outside, also watertight and enough room to store at least 4...

Ash build is def a problem with the stock charcoal grate. Especially when using briqs. Do get a basket made and raise it a few inches. I can do 12 hours or more without dumping ash.
Definitely get at least three, i have done several 10 to 12 hour smokes. Most times i'll use at least two, maybe dip into the third for one last chimney load.
