    Aardvark, i remember them days. I used to live in a middle terrace, 5 rooms. Parking one side of the street with two way traffic. Everything had to come in through the living room. Real pain to store anything large. I understand your dilemna!!

    I'm with Rich on this one ..... i'd say a trailer option would be best. If you know anyone over there who has a metal shop take him some pics of a trailer grill/smoker unit and see what they'll quote you. Living out here i see a lot of these trailers and for catering they are they way to go...

    I normally do the minion method to begin with. Start with a chimney full of unlit in the basket, then dump on about 1/2 to 3/4 of lit. Temps come up quick and hold for a decent time. But from then on i'll always add lit. Didn't want to risk the temp drop. Guess i need to try this way out to...

    Hmmm interesting, this may be why i use a lot of charcoal. I've always scooted the existing coals towards the smoke chamber and then added lit lump to the vent side of the sfb. May just have to try this out on my next smoke. This is what i love about this place .... always learning new things .

    I use this site a lot for all kinds of recipes. Especially them evenings when i have say, some chicken breast or 1lb ground beef and no idea what to do with it. Always find something interesting on there.

    Question on Pulled Beef

    I've done sveral chuck roasts .... think they were arm cuts. All have cooked up good, pulled easy and tasted great. Paid around $2.50 lb I cooked them using the same method as a butt and they came out fine.

    I have used a similar tool just not the same brand. They will only read surface temps. We use them for checking engine manifold and cylinder temps. Although of course being guys we also check the temp of everything from the lit end of a cigarette to ..... well anything you can point a laser at .
