First Shoulder / Butt Smoke. Help?

Its looking real good there. The nice thing about pork butt is that its pretty hard to screw up so relax and enjoy the ride! But if I may add one more bit of info that was bestowed upon me, once the meat gets to 140-150ish, then it's not going to absorb as much smoke as it does in the beginning...

    not too bad

Finally found a good weekend to chance smoking a brisket. Bought a 13 pounder from WalMart. Wife told me I better invite the neighbors! Friday night I trimmed (mutilated) the nasty hard fat. Cut my finger twice. Decided it was trimmed enough! Seasoned with EVOO and SPOG and tucked it into the...

    Its late and I'm tired

Thanks for the tip. Im used to small chunks that don't put out too much smoke so I've never noticed much difference. I usually stick to ribs or small pork butts so I don't use a lot wood because the lump coals give it enough flavor to me. But on larger beef cuts, I like a stronger smoke. This is...

    Suggestions needed!!

I got a Trailmaster a couple months ago and haven't regretted it at all. I debated a long time between that and the WSM but I like the offsets and to me,tending the coals and using sticks is part of the fun. Yes, there are a lot of mods that can be done depending on how much you are willing to...
