    Prayers for those In Belgium

If you haven't heard yet, two suicide bombs went off in Brussels. One at the Brussels airport and one on their subway system near the headquarters of the EU. At least 25 are dead and hundreds wounded. Prayers for the souls of the dead and for all of Belgium as they deal with this.

SV Prime Rib, Lobster & Brussels Sprouts

I'm so sorry you had to suffer through that. I don't know you, but I would have gladly suffered through that meal so you wouldn't have to. :)

    Chipotles in the MES

I don't have any experience with any of these woods. Here is what I can tell you though Munsterfan from all I have read. I have heard people talk quite a bit about orange and lemon. They are similar to many fruit trees in that they impart a much lighter smoke than say hickory would. Much more...

    Starting a Pastrami

So I am not currently doing an eye of round, but doing a brisket flat. It is in the fridge in a brine as we speak curing. It should be ready to smoke after Easter. I have a 5.3# pork belly dry curing in the fridge as well. Happy days.  I did my first pastrami this weekend using a store bought...

    First try at pastrami

Al, You are a mountain of good info. I am smoking a couple of corn beef flats I picked up at the store today for a church pot luck tomorrow. With the rub I put on there it should have a killer bark, and I thought steaming would ruin it. Glad to hear you have done it without steam.

We have been craving fried bologna sandwiches-Bologna with qview

I'll tell you what, Al is but the last east poster child of a growing string of yinz that force me, mostly at Qvue-point, to try all kinds of crap I wouldn't have otherwise attempted. Thanks a lot Al and the rest of you SMFers.

Why is Franklin BBQ in austin so good?

Not to mention the food at Lady and Sons isn't that good. Much better eats in the Savannah and Hilton Head area.
