Well I brined a pork loin and shoulder overnight, dried with paper towels, rubbed them down, and smoking them now. The loins were pulled at 3 hours and an IT of 145. The shoulder is at the 4 hour mark and is at an IT of 136. Should I be worried about the 40 to 140 in 4 rule? I have a Masterbuilt...
Well the Ohio winter is starting to come to an end and spring is around the corner. I haven't been working on the smoker because of the cold temps and unheated garage. Here is a pic of the door that I finished before the deep cold set in.
Hope to finish the painting and clear coats soon and...
Hey Pops, glad to see someone else knows about this. I have never had true Goetta but growing up in Northwest Ohio, we eat something very similar. We call it prettles in Henry County (even some native Henry Countians have never heard of it). From what I have gathered (hasn't been easy because a...
How big was the piece of meat? How long did it take to hit 160? My buddy brought a few over to me this fall and we did an "experimental" smoke. We liked the on wrapped in bacon over the one without bacon. Both pieces were roughly a 12" long with a 3" diameter at the thickest part.

When you first started your build, did you skin the door and trim in stainless or just raw steel? If so, was it around 1/16" thick? I found some snap together round duct work (size and price are right) at Menard's but have a bad feeling its galvanized. Don't' want to take any chances with...
Hi T
I agree with ya on the northern tool. Looks nice but don't like where the controls are located.
After doing some thinking on your low temp problem, I thought a needle valve may help. Below is a post I found describing a needle valve and how they work. The pictures are hard to tell his...
The heater head would be cut into the bottom of the smoker (inside box and outside skin with a frame to block the insulation) and the tank would be along the outside wall. Eventually I want to make a cart that will hold the smoker and tank.
I was hoping you would stop in Dave. I have read a bunch of your posts on different peoples threads and have been taking notes!! Funny how some things work out but probably as your were typing your response, I was reading the same technique that you were telling T Erwin. Hoping to get time this...
Awesome paint job!!! You have inspired me to paint mine in a similar way. What kind of paint did you use? It almost looks like automobile paint with clear coat?
I looked at the Gasser C and thought I may be able to do the same thing but cheaper. I'm actually about to trade a guy a 6-pack for a tabletop propane stove. I'm hoping it will work. Did the "brownie pan" come with the burner? I'm also thinking about using that same concept.
Here is a link to...
Glad the beauty made it through Super Sandy! Hope you and your family made it through without a scratch also. I'm currently demoing my freezer out now and thinking about doing propane. You answered one question I had already about maintaining a low temp. I want to do sausage and jerky in...
What does everyone think about using a Mr. Heater Tank Top propane heater? It looks like it would work slick but I have 1 concern. Will the orange flame aid in the buildup of creosote?
