    Youre qustion is how come the larger one didnt take longer to cook due to its size My recent first brisket the point thickest part was to temp way before the thinnest flat edge. Your situation my guess is the larger butt had more overall fat content so got done quicker in relation to size...

    p setting only works / effects temps in the smoke setting. Cuz he stated hes set it at 225 thats above the smoke setting so the p setting auger speed is no longer altered above smoke. Also the new Pitboss Pro 1150 with the new released PID controller doesnt have a pid setting adjustment...

    Went on at 11pm last night at 250 degrees. Heres a shot at 5;45 this morning at internal temp of 165 just before wrapping in butcher paper. Quick spritz every hour.... An hour into it being wrapped & im at 187 internal now, im scared..... Im not digging how the majority of the crust looks dry...
