    If you're looking for an Italian sausage taste, season with fennel and/or basil. They both have that sort of licorice flavor that's notable in Italian sausage. Oregano would be ok too.

    I'd leave a little sugar in the rub to help with the bark, maybe cut yours in half if you find it too sweet, and add a lot of black pepper. Cumin is kind of subjective, so to taste, but I'd probably omit it, and I'd add onion powder. I'd also omit the salt and, instead, dry brine.

    Did Keto a year or so ago. Broccoli is a staple, green beans are fine, cauliflower is fine too. If you want something a little different, you can mash the cauliflower or mash it mixed with celery root. Carrots are a no go.

    Beyond just searing steaks, if you're making something like round steak or pork steak in gravy, you can sear the meat, develop some fond and deglaze the pan, which makes real good gravy. Same is true for sauces.

    I've used the Amazn tube on my gasser. Also have used those metal boxes that you put soaked wood chips in and put right down on the burner. Both work good. In fact, I've used both at the same time on a few occasions.
