    MES 30" not working after replacing element - help!

    Im only reviving this in case someone has the same problem. Mine is now solved and I have been smoking with it for the past couple of months. The problem was in fact the little round temperature shutoff sensor that shuts off if the smoker gets too hot. Once it trips the smoker wont work anymore...

    Well it seems that most feel the meat doesnt need water in the pan to stay moist.. so its mainly acting as a heat shield and drippings catcher. I usually have an aluminum pan under my meat to catch drippings so I wont need the pan anyway it seems. Thanks for your advice folks.

    I was planning on smoking at 250 in my MES, and I bought some butcher paper that I may end up using with your suggestion. Smoking a 5lb (est) flat 250 and wrapping with butcher paper shouldnt take much more than 6 hrs would it?

    Im smoking a 10lb packer in a MES 30", so I need to separate the flat and point for it to fit. Will this reduce the cooking time? Im trying to plan for 7pm saturday night, and I will want to rest it 1-2 hours. Any guess as to when I should put it in the smoker?
