Ive tried taking the chip loader out for air, but it didnt help the tray in the previous smoker. Maybe this one has a better air flow. Do you use the tube or the tray?
I think I usually let it run at 235 for brisket, but if its a big one I will probably go 250. I want to allow for about 12-15...

That really wasnt the case with the ribs I just did. I sprayed every hour for 5 hours. took em off after 5.5 hours and they were about 30 mins overdone in my estimation. Still tender but a little dryer than I like. great crust tho. I have an MES, so maybe that helps cut down the recovery time?
I have had some good success spraying apple cider vinegar on my ribs, every hour for about the 5 hours they smoke. Makes a nice bark.
Im going to do a chuck and a butt this weekend, do you think it would be a good idea to spray ACV on it every hour as well?
I pretty much use hickory on everything. Other woods are good, hickory is just my standby as I like the bit of sweetness it adds. Havent tried oak, how is it compared to hickory?

I usually like to target smoking/resting/eating all in one shot. But I have to work Saturday and still want to devour a smoked chuck for the game (7pm kickoff). I want to smoke it Thursday and reheat it sat evening.
So would I take out of the smoker when its done ,and let it rest, uncovered...
While I agree with needing to look for yourself, it also helps if I know which ones you guys have exactly so I dont end up with a 2.0 when I want a 2.5..
Actually the model # can be very helpful, esp in this case, because so many of their smokers look alike. In mean in this case, the one I think I want looks the same as yours, but has 4 racks instead of 6 that yours has. Id be very interested in the 6 rack model, but without the model # id just...
It seems that the Masterbuilt 20070115 is the one Im looking for. Its the 2.5, 40" with bluetooth. The problem is I cant find anyone who has it, not even amazon. Can anyone point me in the right direction?
