Smoked 3 racks of St. Louis style ribs today on my Oklahoma Joe Highland for the first time. I ran my smoker between 250-275 and used oak/cherry combo. I did 3 hours on grate, 1 1/2 hrs in foil and finished with sauce for about 30. The times seemed fast but they seem to come out great.
