i have always gone by the nose test if it dont smell normal dont eat it. honestly i think you could be stretching it a little too far... you could always freeze those now and use them another time but if you wait and the end up going bad you wasted alot of meat. -

Sometime early next year i plan on buying one of these smokers im not sure which one to get or even which model to get? i want a set and forget for overnight and really long smokes or whenever im lazy. WSM 18 is it worth it?
Well if that used 18.5 WSM is more than 250 i wouldn't buy it because you can buy a brand new one for 300 also depends on current condition. So i could smoke a butt or whatever the weekend before then pull/slice then freeze it with... say 1c of finishing sauce then re heat it the morning before? .... i wonder if i could throw it into a crock pot frozen over night then it be good by morning? -

Where i work the whole company has a "Tailgating Party" on every Friday that that the local college football team (University of Tennessee) has a home game that weekend. its more like a big potluck... So the question is what smokey treats would be good to to eat the next day at say around noon? -
