Some use a water pan sitting on the charcoal tray (not inverted) as a heat sink next the SFB opening to balance temps. Others flip the tray & use it as a baffle to balance temps & no water pan is necessary. I use the inverted tray & have not seen the need for a water pan.

Welcome to SMF. Fireboxes that have lids are made so you can use the firebox as a small grill for steaks, burgers, etc. A SFB without a lid would be more efficient (IMHO) since you would not lose any heat or smoke if the lid did not fit tight. A side loading SFB might be a bit awkward to work...

I don't usually measure middle temp until I insert one of the probes into the meat. Then I move one probe to the middle near the meat. The temp then is within the same 10 degree range as long as I have the stack mod in place.

If I wrap while cooking its usually around 160-165 or wherever the plateau sets in. I let it continue to cook in the foil until about 195-200. Then it gets a second wrap of foil, a couple of old beach towels & into a dry cooler for at least an hour (longer is better)

The same mods that work on CGs, silver smokers or any other offset will work on the Brinkman. If you use a charcoal basket to raise your fire up in the SFB & get good air flow thru your fire, you should not need to build a fire in the cooking chamber. If you are still having trouble getting...
Its hard to get accurate temps on ribs. The 3-2-1 method is almost foolproof. On the last stage, you can use a toothpick to test for doneness. If it slides in like soft butter, the ribs are done.
I typically only foil if I need to shorten the cooking time or if I have a stubborn butt that doesn't seem to want to break thru the plateau. If I don't foil a butt during cooking, I do foil it after taking it off the smoker for the resting stage. IMHO, it is the resting stage that really makes...
