    Smoking a couple of chickens need advice

    Chickens done in 3-5 hours,  2x that on the brisket. or more depending on size for sure. I prefer to do the brisket the day before and reheat the brisket while cooking the yard birds... just a thought.

    30gal SS Drum pics. Help me with a build?

    Ok here's my 30 gal uds, I drilled 4 ports on the bottom for air flow, 1 ball valve, 3 threaded pipes 1-3/4 inch about 3 inches above bottom, drilled 4 1/2 inch holes for 2inch long screws to hold weber 18-1/2 inch grill grate.cooking grate should be at least 7 inches from top, handles...

    Well, gotta tell ya.. I was at a mountain bike race this fall, and they where given away stuff... one of the prizes, you had to guess how many days old a McDonald's Cheese burger had been sitting in a car. So, the visual was, a cheeseburger that looked like it had sat for a day or 2, No mold...

    Grill is 7inches from top, with one ball valve, and 3 pipe, openings 3 inches drilled from bottom, cap off air as needed to control air intake. Keep it at N,S,E,West configuration.

    your good for aleast a 8 hour spam,, filling my basket with a 1/3 bag of stubbs charcoal, it burns long, and you will wake up with about 200*degrees still in the barrel,. this is with outside temps in the high 80's in afternoon, low 60's by early mornings. * have not use a full bag yet for a 12...

    Luck out at work, had a spanking brand new 19inch dia. Drum, fits the 18.5 weber rack like a glove! Butts 1st hour in, the drum burns a steady 225-250. 7 hours in, drum at 200, pork at 175, Spritz time and I'm foiling and refueling, all good so far..

    Thanks 4 the recipe, made it last night, also try Hungarian paprika, blend was not as red as some Jared rubs, which is a good thing, flavor is great combination of sweet, savory, and a touch of heat. Gonna try it this weekend on brisket 4 sure!
