    Thanks to everyone for all the valuable information. Cooked a 9 lb. Pork shoulder today and it turned out awsome! Great method for pulled pork. I did not make the finishing sauce this time but am looking forward to trying it next time. I did make a killer sauce though!

    I also find that if you use fresh never frozen wings at room temp after rub (30-45mins) you can't go wrong

    Even if your smoking now, if you have some good cooking experience wether its bbq or oven, then your already off to a good start. Its just a different temp and cooking time.

    I would love to know about the diverter. First smoker I havr made or owned so the more feedback the better. My boss had a horizon off set and I used it to model mine I just made it biggger and with heavier material. Every piece can from a scrap bin at a cost of $8.44 for both the handle springs...

    I smoke my wings for 2 hours at 230 and fry the sause on them using a cast iron skillet on the bbq. Makes them crispy. No injection just rub.
