When I was getting to know the smoker and if I should trust the outside thermometer I would use one of my wireless probes put through a potato so it can stand to give me temp readings from inside the smoker.

Minion method for one. Someone could describe it better then I can I am sure. But it is basically making a trail of unlit charcoal and throwing some burning charcoal on at one end. Usually done by modding your charcoal box with acouple solid metal pieces.

The pizza sat in for about an hour. It was a cheap little microwave one, think the smoker lacked temp or it should of been in longer.
It was still pretty good, the crust was cooked but a tad to soft. A hint of smoke which made the cheese alot better.
