I dont think it would hurt anything to leave it in there. Ive never cleaned my smoker and its caked with stuff. I just clean the grates with a wire brush.
Isnt a fatty/ABT combination called an Armadillo egg? When I make them I wrap each individual ABT in sausage. You made a grand daddy armadillo egg. They sure are good. How do you get the sausage into a perfect square like that?
It might have been too much Stubbs rub. I use it sometimes on brisket. I tried it on a pork butt once and it came out too salty. A little bit of that stuff goes a long way. Its more of a sprinkle than a rub. As for it being too smokey, I dunno. Did you have white smoke blowing? White smoke...

I smoked a 13.5 lb brisket last night. Started it at 5pm, smoked it until 2am then put it in the oven till 6am. I woke up to my timer saying "almost done....almost done....almost done. Anybody else like coffee and brisket for breakfast??

That looks sooo good HH. The smokyokie method works great for roast. I never tried an egg with the fatty, it sure looks good enough to try though.
Chris, our briskets are $1.99lb and roasts are pushing $4.00lb.
I use charcoal and wood in my offset firebox too. I start by adding about 12 unburned charcoal brickets to the firebox then add a chimney of lit charcoal on top of that (minion method). When my smoker gets up to temp Ill add a chunk of wood (off to the side, not directly on the flames). Works...
SoFlaQuers finishing sauce is very good. Ive used it 2 times now. Except I substituted the Tony Chachere's Cajun Seasoning with some other cajun seasoning. I couldnt find the Tony Chachere stuff.
But it was still very good.
