I have a brinkmann snp side box. I use oak for heat, but I use cherry, appleand persimmon for flavor. I use charcoal to start and maintain the fire, but wood does the work.
My buddy that work for a counter top maker, gave me the sink cut out scrap. Turns out the piece comes from a Boos butcher block counter top. It was unfinished , so he made sure to give me some food safe oil for it too. This thing is big 28.5 "x18.5". Now I don't want to get it dirty.

They turned out great. Just 1.5 hours per batch, two batches out today.
I left out the horseradish today , so my wife can enjoy it more.
I just wire brush them after heat up and aftrr smoking. My wife doesn't complain, she says it builds immunity. She's a vet ans the dogs aren't sick , all good.
