So far it was my first fatty which was well to say the least was VERY overdone. It still tasted excellent :)
Problem: Overdone
Cause: On too long and bad temperature control
Resolution: Probe thermometer to monitor chamber temp and internal temp accurately and spending time...
I think the main thing is that every smoke and piece of meat will be different. I am new to this and have done a 4lb butt that took 6 hours and a 4.6lb that took 12 hours, nothing i could really point my finger at.
Enjoy it when it's done :)

No it isn't, however the most snow i have seen here in the last 10 years was about 3" which only lasted for a day or so. If it is forecast it only takes the removal of 10 screws and the whole roof section will lift off.
I think one of the other versions i have seen has 4 full length posts...
I picked it up as an end of season clearance and paid £169 ($300) after 70% discount.
I think they originate in the US, hopefully someone can point you to somewhere you can find one.

Finally after receiving a missing part a couple of weeks ago i had chance to finish off my smoking shelter, it rains here A LOT so this makes me happy as i don't have to worry about it now :)
Just enough room to squeeze the ECB in next week :)
Jon.
You are on here and NEED to know what to do with it lol.
Just be very VERY careful to make sure it's safe before you try cutting it etc. I don't know how to make one safe but the guys that do will no doubt be along shortly to help.
Looking forward to seeing the pics :)

I only burn 12.5 or 15% in the heli's currently, 40% in the 1/8th buggy.
As for the trike i'm planning something Harley based I think, after the last off 2 wheels are no longer an option :( Looking at your family i'm gonna need the plot in France sooner rather than later ;)
Jon.
Cheers WD :)
Seeing as the weekend weather doesn't look good for any smoking it looks like a modding day tomorrow if it turns up ;) failing that i'll have the bits ready :)
Jon.
That looks great, i'm aspiring to something the size of one of the larger Langs. I plan to move to France in the next few years and hope to learn enough to be able to justify one, mind you the plot of land i'm looking at it 5 acres so no neighbours to annoy lol. I hoping to buy a MIG welder...
Well, i originally started out with a CGSP about 8 weeks ago and thought that would be enough..... well, due to charcoal constraints and help from Brandsbay i have added to the fleet tonight :)
As i'm only going to do smaller stuff until i source wood or more charcoal I bought an ECB as it will...
