Stall big time. Mine stall around 6 hours and learned the same way. So what i do is plan on 10 to 11 hrs. You push thru the stall and when you hit 205ish foil it and throw it in a cooler and it will same warm till dinner. That way your early and not stressing on time.
I use apple strait. This weekend I did cherry and peach as the main then ran out and used apple. I would try one flavor at a time, find which one works and then start mixing. This weekend came out alittle "heavy" on the over all smoke taste but others loved it.
Great reminder. We just had a family here in vegas lose their mother and father from the fryer tipping over, oil fire and then the house caught on fire. Their kids are still in hospital. BE SAFE!!!!!
