I too have a Rock Island in .45 compact. Only got it last Oct. so my count is closer to 200 rounds. Had a bit of trouble (my fault) with the proper seating of bullets on the case so they where not loading into the chamber correctly. But factory rounds went off without a hitch. I have only...
Got an old moving blanket? Or small old cloth tarp? Put it over the smoking chamber but not the fire box section. Keep an eye on the blanket to make sure it does not start to smother (aka catch on fire). Add more fuel and open the damper so it builds up more heat.
Seen on pit masters.
I am real new to this smoking business, but I can tell you what I have discovered over the past few weeks with doing pork butt or shoulders. And from reading the post about doing the same. There just aint no way in heck you can smoke butt or shoulder and serve it for dinner on the same day...
Well it sure did get quite all of sudden. I see that the last post was the 1st of July and now we are into the first of Sept. I suppose either you all had the gathering or it just flopped. I am really new and struggling to get a good smoke. I went from a some what shut down of the exhaust vent...
Ok, take this from someone who is a newbie and might be barking up the wrong tree. But this is my thinking. First, I wish I had your resources and skills. Nice looking rig for sure. My only question is this. How are you going to get out the ashes? Maybe there is something in the floor of the...
MrMiyagi,
It is kind of hard to understand just what your comments are addressing at times. As to the galvanized pipe. I know that if it is heated to a given temperature it will produce a toxin. But using it as an exhaust pipe on a smoker. I have to wonder if it will reach that temperature. but...
And if the meat is injected? I am thinking of injecting some beer into my next pork butt for some flavor and to help with the tenderizing. So, what what happens if it is injected and what should I be watching for?
Thanks
oldschoolbbq,
Would you be so kind as to answer new 2 da que. I would also like to hear the story behind what those chunks of wood are? Being one of the newbies. Seems that recipes and rubs are talked about. But right now me and a few others just dont have the mechanics of the smoker and the...
Your right and I have now. Also there was another person that posted some shot of the way that they position their fire and where they position the smoking wood. Along with some explanations that caused the light bulb over my head to light up. Going to put it all to use tomorrow when I do my...
Thanks guys for the answers. I am just a dumb hick that is just been terribly lucky so it seems. That or I have a cast iron gut like a dog. Wife does say I take after a dog.
Will do more reading as suggested on this subject.
I hope that this is not seen as a hi-jack of your thread. Call me stupid but I am missing something here. I put my probe into my meat before leaving the kitchen. Now if the meat gets above 190 degrees. What does it matter when you put the probe in? Surely your not going to grow that much...
Wntrind,
Thank you so very much. Been doing the old over thinking and was getting dizzy. Your discription and pictures answered all my nagging questions. I have a side fire box but not your brand. I think it is the New Brumfield or something to that effect. Point is that I first found out that...
Warning, My wife just looked it up. She vagley remembered reading something about Tongue years ago, it is considered an organ. And people with gout should steer clear of it. I remember my Grandma and my mom boiling it up in a pressure cooker with some seasoning. Smoking it makes it sound even...
Hi Red,
I am new here and reading through all of the post I can. Just did some salmon and I was not happy with the brine that I read somewhere else. 2 c of soy with 2 Tsp of brown sugar. Fish came out looking good, but each bite is like a mouthful of salt. Your brine sounds great. If you dont...
Retread,
Did see the MES, but didn't recognize what that stood for. Thanks for the heads up. And was not aware that a electric smoker does not produce a smoke ring. Another learning point. Dang 2 things that I have learn in one reply. Thanks for the info.
Hi guys new here. So, Daddy please do not take this the wrong way. This is a dumb newbie question and not to be taken as being critical of your brisket. Looks great on the outside and I wish mine looks like that. But I am used to seeing a pink ring around the outside edges going from say 1/8 to...
I cant believe all of the fine folks here and all of the information you all have collected. It didn't take me long to realize that I had been sort of doing the right things last year. But this year I took a nose dive off into the wrong direction. But from what I have read so far and plan to...
Hi everyone,
I was pointed to this site from another member. Just started reading yesterday. Found out what I think is my many problems. In short I am doing everything all wrong. So, taking notes and will have to try next time I have a day off of work. All I have to ask right now is to please...
