    Thermo Works Smoke

This looks fantastic!  I like my Chef Alarm, but I've always wished it had backlight and that it was wireless.  And I switch the single port between meat and air, so having both - remotely - would be nice.

    Bad smoke in my MES

I haven't tried the AMNPS, but I'm very interested in it.  What I bought early on was the MES smoke generator, which I attach to the side.  I noticed bitter smoke once, then followed a guy's advice.  When I first light it, I leave the top open on the smoke generator and close the vent on my MES...

Boston Butt Pulled Pork (Step by Step)

Bear, you just made me laugh out loud!  I'm working from home today, so my dogs are wondering what's wrong with me.  :-)

Boston Butt Pulled Pork (Step by Step)

I had two butts (cue laugh track), so I decided to inject one and not the other, just for comparison.  I used Mike's Magic Dust on each (I'd like to try different rubs sometime).  I would say that when I took them off the smoker and cut a piece off each, that the injected one tasted a bit...

Boston Butt Pulled Pork (Step by Step)

Bear!  I'm going to smoke a pork shoulder this weekend.  I've had good results in the past, basically following your steps.  However, I've seen a few shows that say to either wet brine or inject the night before. Have any of you guys tried injection?  Opinions on what to do the night before...

    Homemade Montreal Steak Seasoning

Let me know what you think.  As good as this is, if the official steak seasoning is better, I'll buy it!

    Mama Bear’s Day 2016 (Ribeyes)

Oh my gosh, that looks fantastic!  I'm still trying to figure out the best way to cook steaks, and what you did looks perfect. I smoked our steaks last night, and we really liked how they came out (I never think to take pics, dang it).  I smoked with some wood chips my son and I bought on a...

    Homemade Montreal Steak Seasoning

I smoked our steaks last night, and was looking around for advice and found this seasoning recipe.  I cooked an extra steak with this, in case we didn't like it.  The concensus was, we loved this seasoning! http://dontwastethecrumbs.com/2015/05/homemade-montreal-steak-seasoning/

    Vote for Best Electric Smoker

LOL, good idea!  It's hard to break in a new one!  Of maybe get broken in by a new one.  Mrs Dogwalker and I have been tied together 31 years this June, and I've learned that she's right.  About whatever we're doing. :-) Yeah, she and one son like their steaks medium, and my other son and I...

    Vote for Best Electric Smoker

That's true, I love my window!  The only reason I open the door (and maybe this is because I'm a novice) is for a few reasons. First, of course, is I let the smoker preheat and then have to open it to put my meat in and insert the meat thermometers.  But I follow the advice that you (Bear) gave...

    Vote for Best Electric Smoker

I have the first gen 40" MES and love it, but then, this is my first smoker!  I did get a friend to buy the same unit, because we both love the results and ease.  I know I love the convenience of an electric smoker, and I finally got this process down after a lot of practice.  Now you all have...

    Reverse Sear Ribeye Dinner

mmmmmmm, that looks great!  Thanks for sharing!  I'm cooking steaks tomorrow night and may try that.  I generally cook them in my smoker, but without smoke ... so basically, an oven.  :-) But your searing and rub look tasty!

Boston Butt Pulled Pork (Step by Step)

Looks great!  Life has pulled me away from the smoker for quite a while, but I'm hoping it'll settle down soon and I'll get back to using some of Bear's recipes!  They've done great for me in the past, that's for sure!

    mes cold smoker kit.

That sounds great!  I use pecan and maple chips most of the time, so that sounds really good.  Thanks!

    mes cold smoker kit.

I smoked a few chicken breasts with the MES and CSK last night, and it went fine this time.  I guess the key is having the MES on.  It was nice not having to go check the smoke every 20-30 minutes to add chips.  I put a few handfuls of chips in the CSK, and it smoked an hour.

    mes cold smoker kit.

Great!  I'm going to try mine again in the next few days, and I'm going to follow Masterbuilt's suggestions 1) turn the smoker unit on 2) turn the CSK on after putting wood in it 3) open the MSE vent about half way and I'll probably also pull out the little ash tray about 1/4" but I'll...

    mes cold smoker kit.

My last smoke was good, but I think I took too many preventive steps.  I called Masterbuilt today, and they told me: 1) the main unit has to be on (so no smoking cheese, but that's ok with me) 2) the vent should be about half-way open I'm going to smoke some chicken this week, and we'll see...

Thanks!  I'll try it again this week.  Looking forward to it!

    mes cold smoker kit.

I tried the cold smoking kit again this weekend, and it worked fine.  I'm still trying to figure out the exact configuration I need.  I was smoking chicken, so the MES was on. I followed tips from another guy who said to start the CSK with the cover off to let that initial thick smoke dissipate...
