If your looking for a cover the regular weber 18" grill cover works prefectly for it. Also I wouldnt trust the thermometer on the smoker, its not that accurate. I put a regular oven thermometer in there.
I havent done brisket in a long time and I know I cant put a whole packer in my smoker (maybe if i seperate but prob not then either) but im inerested in trying it with the fat cap left on. Iv always trimmed before with good results.
Ok Iv never foiled but then I like thick bark. Iv not had any problems out of the 5 or so Iv done with it being moist. I do like to add a finishing sauce though but it is more for flavor than moisture.
