    Take Piney's advice and allow for some extra time, remember it's better to finish early and let it rest in a cooler than be rushed at the end.     Welcome, the information on this site is great, you should be able to make some great smoked meats. If I understand correctly, you're converting a stainless steel sand filter into a smoker? Sounds like your going to put some time into it, take some pictures and post them once it's done.

    Good job!! I love smoked salmon. If you have any left over, smoked slamon makes a fantastic fish spread. Just mix the salmon with some cream cheese, chopped celery, and put on a cracker with hot sauce, so good.
