    There are three all stainless steel models. All are expensive but reliable. Smokin-it, CookShack, and SmokinTex. I have a Smokin-it and Cookshack. Utterly reliable. No problems or iffiness. Just solid performance. I have no experience with SmokinTex but they have been around for many years.

    I am down to my ancient Rival. The Chefs Choice 665 broke at the gear hub and no parts available. Sure glad I kept the Rival. Does great as long as I flip the meat every 5 or so passes.

    Reminds me of a haircut my dad got for my younger brother and me on a Saturday in the late 1950's. Don Eagle (Mohawk) is what it was called. Mom would not take us to church with her on Sunday.

    Meat grinder recommendations.

    I have the LEM Big Bite 8 and it does all that I need it to do. A 12 would have been impressive but overkill for our needs and frequency of use.

    As someone else said, looks like carbon steel. Tarnish happens and adds character. Super easy to sharpen. Keep the wood handle oiled to avoid splitting/cracking especially the end grain at the blade. It looks like a keeper to me.

    Looks great! I use chuck for pot roast, shredded for enchiladas and tacos and ground for burgers. Never smoked one though and your looks really tasty. The bag should have a lot of flavorful juice/broth. Enjoy!

    The vitamix is pretty spectacular as blender. One of the first foods my wife made when we got the vitamix was a squash soup and it was steaming hot and delicious.
