    20 lbs Of Brats

Pork butts were on sale the other day so I snagged a few. After de-boning and grinding I ended up with almost 20 lbs worth so I topped it off with some trimmings from the freezer. I used this recipe...

For anyone going to try Melatonin be sure to read the label before you buy. I recommended it to a guy at work yrs ago for sleep and a few days later he came into the break room and said you can have this,it made it worse! I looked at it and he'd bought the kind with vitamin B6 and 12 in it...

    Winco Pork Butts $.98/lb

I've got 20 lbs deboned, cut up and setting in the freezer cooling to grind tonite for sausage. That was three 7-8 lb'ers. I'll probably pick up a couple more. Wish they'd get some loins in though, haven't seen any there for awhile.

    ButterBall boneless breast.

My sister and I were almost ready to buy the 360 too but the 2 year warranty on this one compared to the 360's 90 days put me over the top. Also I noticed that Cosori has replied to every negative review on Amazon on all their products with "we can fix/replace that, contact us". They're getting...

    ButterBall boneless breast.

I just picked up a Corsori oven that does pretty much everything, air fryer, rotisserie, ect. Big enough to cook a 12-13 inch pizza! I'm dehydrating tomato's in it right now. My sister checked it out and bought one too. $20 off at Amazon with coupon. I'm pretty impressed with it so far.

Cheese So What is Your Favorite Kind?

I haven't tried this yet but I just picked up a 2 lb hunk at Costco yesterday. I meant to grab a wedge of the Danish Gouda too but I must have seen something shiny and got distracted as it wasn't in my cart at checkout. I'll go back before I smoke the Swiss and snag some. I think Gouda is...

    ButterBall boneless breast.

I decided to rotisserie instead of smoke this one. Mainly because I wanted to play with the rotisserie. ;) It came out better than expected but had an abundance of turkey so sliced and froze it for sammiches later. SPOG only.

    ButterBall boneless breast.

Looks good! I was planning on picking one up tomorrow. Seems like the boneless are always good but I've had the same luck with bone in breasts, ones great then the next one is meh. I bought a heat & serve last week. Didn't really like it so I thought I'd add a bit at a time to my dogs food. Her...

Harbor Freight propane torch, is it safe to sear food?

You do know not to use it in the bathtub or shower don't you? :emoji_stuck_out_tongue_closed_eyes: I've used one for searing steaks etc. I tossed the meat on my grill and let fly. Works well.

    need a new sausage stuffer

The only sausage I've done so far has been brats, 32/35 casings and the 1st run through I was actually surprised on how easily it cranks. No strain at all. Eta along with the ones Steve H and zwiller have theres a couple on Amazon that look just like the Hakka, Super Deal and Zeny. If I had to...

    Air fryers

I've been looking at the Corsori. Its a bit bigger than the 360 and has some good reviews though nowhere near as many overall as the 360. 1800 watt. Also has a 2 yr warranty versus 90 days. The downside is that as of yet they're not selling accessories, trays, pans etc. I've got a question in...

    Stick blender

I've got a Cuisinart I picked up at Costco. The whisk attachment sure is nice for mixing brines. Sugar and salt dissolve fast!

    need a new sausage stuffer

I've got the Hakka 7lb/3L model and I'm definitely not an expert on stuffers though I've used it a couple times. What I do when the tank is out of meat is run the plunger up on "fast" and push the remaining meat in front of the tube and it'll then push most of it thru. Not sure about the comment...

    Mini Fridge On Sale

Pretty small but I'll take a look at it anyway. I'm apt dwelling now otherwise I'd pick up a used full size fridge. I'm thinking at worst (or best?) it may work to store soda, milk and odds and ends in to clear up space while I'm brining something in the big fridge.

    Mini Fridge On Sale

I think I may pick one of these up for brining/curing. I'll measure 1st because its not very deep (or wide) but the Rubbermaid containers I use for brining pork loins/bacon are pretty skinny. It doesn't have the mostly useless freezer at the top either...

    Best electric smoker to buy

I've got a Smokin-It and don't have any complaints. Customer service is excellant (3 yr warranty) and its built like a tank, very well insulated. I use a Smoke dual probe thermo with it. Set it and forget it. You can burn wood chunks, chips, or cold smoke with an A-MAZE-N tray using pellets or...

I Need help getting my electric smoker to produce more smoke

Fixed that for ya! :emoji_grinning: X's 5 on the Amazen tray. You'll want it for cold smoking too.

    Colder weather = smoked cheese

I made a pulled pork/mushroom pizza the other day topped with smoked mozzarella and it was possibly the best pizza I've made to date. I'll be upping my mozzarella stash this winter.
