    Containers for brining brisket

I use the Sterilite containers from Walmart. Cheap and they're stackable. Q: What materials are used to manufacture Sterilite products? A: Our products are made of polypropylene and polyethylene that are safe for food storage. No PVCs, Latex, Teflon, Phthalates chemicals, fungicides, Bishphenol...

    Coffee seasoning for steak

I use Joe Carrols Fette Sau rub on butts and I do like it on sirloin caps. 1/2 cup of kosher salt is probably plenty for steaks. 1 1/2 cups packed dark brown sugar 1 cup kosher salt 1 cup finely ground espresso beans 1/4 cup freshly ground black pepper 1/4 cup garlic powder 2 tablespoons...

Food saver mason jar attachement worth it?

We got all your 32 oz'ers out here. Was looking for some pint jars the other day and all they have on the shelves in 3 stores are quart and half pint. 9.99 for a dozen quart. Store clerk when asked said that was 3 times that she'd been asked for pint jars that day, whats up with that? Maybe that...

    New home Smoker Temperature controll

I've got a PID in my Smokin-It and it burns chips fine. That said I usually burn chunks and have only used chips once. I don't know how long a load of chips last in a Masterbuilt but in my gas smokers it was generally less than a couple hrs so in that case a mailbox mod would be a good option...

Where do most of you get all your gear? Big box or small business??

I buy local when possible. I don't mind driving 25 miles (rural area) and spending a few bucks more if necessary. As for rubs, seasonings etc I'd always rather buy from a smaller online retailer as opposed to the big box stores.

    Owens Collagen Casings?

Decided WTH I'm spending that "free" $600 gubmint money (that they took from me last year). Got German Bologna, Trail Bologna and Garlic SS plus a bunch of casings. I'll probably do some pepperoni stix and German bologna 1st. I've got some Green Onion seasoning from another order that sounds...

    Owens Collagen Casings?

Thats what I was going to order was the German Bologna and North Country SS seasoning. I might have to make another order, German bologna is delicious! I did get some TexMex stick and Garlic Onion brat seasoning plus I still have a couple from my last order that I haven't tried yet. Need to get...

    Owens Collagen Casings?

Has anybody used these? Searched and most recommend The Sausage Makers or Waltons. Sausage Maker is back ordered on what I want and my 1st Waltons order is somewhat of a debacle right now. I don't know if I'll be ordering from there again depending on how its resolved. Yeah, that cranky old guy...

I switched to Brave awhile back. Its definitely much faster than FF and more secure, just took awhile to get used to the layout. https://brave.com/

    Salt question

Marshalls Creek makes quite a few salt free blends. I haven't tried any of them myself but I passed them on to Pops a couple years ago and he was pretty excited about the sausage seasoning. https://www.pureandnaturalspices.com/Seasoning_Without_Salt_s/1819.htm

    Boarshead Cheese Smoke

I might give my BIL a taste of the horseradish but he's getting an A-MAZE-N tray for his birthday so he'll be on his own after that. Other than that I know my sister wouldn't like either because "spicy". We went to the local Mexican resturant and she thought the (medium hot) salsa was too hot...

    Boarshead Cheese Smoke

Splurged on some Boarshead Horseradish Cheddar and their Chipotle Gouda the other day and got around smoking it tonight. 4 lbs Chipotle and 2 lbs horseradish. 3 1/2 hrs with pecan. I taste tasted the Boarshead HR and Cabot HR side by side and the Boarshead was quite a bit better IMO but...

    Smokin-It Regular vs. Norman Cart?

The legs on the Smokin-It #1 and #2's (not sure about #3's) are drilled out and threaded for the wheels which makes it pretty easy to thru bolt to whatever you want to put it on. I don't think I'd want it just setting on something at least if I had to wheel it around much. One sharp corner or...

    Smokin-It Regular vs. Norman Cart?

While the Smokin-It carts are nice I didn't want to spend that much on one so I got a Seville Classic cart from Amazon for my #1. Its plenty sturdy enough and has a lot of room for storage underneath. They also have shelf liners so you won't have to worry about dripping grease etc thru to the...
