Definitely keep your arc on the thicker metal! You can also tack the angle to it on both ends, then take a small propane torch and heat the thicker metal up. That should help a bit. Practice on something similar first before attempting the real thing. Good luck!

Last night I rubbed 2 racks down with some mustard and Apple juice. Then I put my rub on them and back into the frig for today. Will be smoking them shortly. Just thought I would share some pics. I like to cut them into 3 or 4 bone sections before smoking.
I use those same casings for my deer summer sausage. Something just doesn't sound right with your smoker. Mine only takes max of 8 hrs even when the temp outside is below freezing. I would try another batch of just 5 lbs next time to see how it acts. Those look good though!
My wife bought me a turboforce for Christmas about 5 years ago. I've been very pleased with it. I've ground about 20 deer through that thing. It takes meat faster than you can feed it.
I found that the ac legs snack stick seasoning was too salty for me as well. I even cut back on the ratio. I'm smoking some chicken/beef snack sticks today with my own recipe.
OK I'm looking at attempting this today. I want to try some chicken snack sticks. Just wondering if anyone has had more experience here since this last post. Is there a minimum IT that you have to hit because it's chicken? Any good recipes?
