    I got a good price on chicken, so I had to cook some up. These had brine with chinese five spice and brown sugar added. Rub consisted of salt, pepper, ginger, and garlic. Finished with an apricot ginger bbq sauce that I concocted.

    It was appreciated by the guests. Next time I will make my own bbq sauce. I need to try my mother's recipe on ribs. I had the time today, but my sweetie requested her favorite brand of sauce. Who am I to argue.

    Some ribs questions

    I can't help much yet. I'm doing a 2:2:1 with my baby back ribs today. I added sliced apples and juice for the foil. I'll have to let you know how they turn out.

    Roasted crushed garlic, fresh ground pepper, sea salt onion powder and some crushed red pepper for the rub.

    Here are the ribs after 2 hours. Foiling next with apple juice and apple slices. Used pecan wood for the smoke.

    When you know that you are really hooked on smoking

    Ok, I've just started smoking, and I've thrown hotdogs in the smoker because I knew they would be ready when I had to add more fuel.  Great way to get a smoke fix fast, while waiting for the main course to finish.

    Ash fir wood

    I thought the ash was good for keeping my house warm too.  Good heat, clean burn, starts well, but burns fast.  I'll try some in the smoker.
