    Depends on if you want pellets or wood/charcoal. If pellets i would go rec tec as another suggested.

    Out of the wrap. Smoker at 180 to set the glaze.

    3hr/ wrapping time. The smallest one closet in the picture had a full bend when taking it off. The other 2 were at 3/4. Turned the pit down to 200. This should get them where I want. See you all in a hours or so.

    Do both. Smoke low then high heat grill to refirm and set any sauce or wet exterior

    @Cattoon a few more days and you're there. Can't wait to hear the results. Also I usually do not smoke anything smaller than a 2lb blocks. You will be good.

    Took a 3 pack out of the freezer from Costco. Almost no cleanup was needed on them. Rubbed down and let them set for about 15 minutes while I cleaned up the counter. Earlier today I was using the Kettle to cook a bunch of tenders to seal for later meals so I cleaned out the pellet pooper...
