I have a friend with this unit and he really likes it. The one thing he cautions is that you have it farther away from a RV/Building on the back side of the unit as he said he had his going and the heat was so bad out the back that is RV siding was way too hot.

The flavor you get from your weber is the result of the burnt coals/wood. This rub has a charcoal base in it which may give you something pleasing but it will not generate the same as the weber.
That being said I think its worth trying...
Take your trimmed and render for tallow and you will save money because not only will you have ground beef you will have the tallow that is expensive in the stores.
I use the large costco rolls with no issue. I haven't had the issue with it pulling more out. Im going to go home and test that now. But I have had it a year and it has performed flawlessly.
Had some at the best in the west rib cookoff from Butchs Smack Your Lips BBQ. Also was at the south FL gathering and was able to Judge and the ones that @jarjarchef made were pretty special.
