    I save the bones and head of salmon . to make salmon soup with rice. Its wonderful. Also save the bones to smoked, since it has meat on it still. After it smoked I get the meat off the bones and make a smoked salmon dip.

    Fish sauce is aged for the flavor. The good stuff can be 3 or more years old.
