    Sounds like one of your temp gauges is off I bet the smoker temp is not running true You set it to 160 but it’s probably only 125-130

    Did 50#s last Monday buddy said he needs 40#s more so did them today and some ribs for use I don’t mine the practice competition starts soon but I think I have butts down get same out come every time !

    Yes no problem 225 is a good temp looking around 8-9 hours depends on stall you could wrap it when IT is 165 then bump smoker up to 230-240 if you are short on time if not just let it ride I spray every hour with a mix of apple juice and apple cider vinegar 195-200 a good IT for Butt let it rest...
