    Well all is left is clean do a burn or 2 test fit to trailer paint then put gauges in !

    Take your meat out of frig let it set at room temp for 30 mins till smoker is up to temp and smoking you can put prob in right away or later don’t matter One Meat hits IT you looking for pull it off let rest for 30 -40 mins before pulling if you are pulling Meat I would take it to 200 It

    It takes time for the flavor to Develop the so after stuffing it should rest in frig over night then when done it should rest for 24 hours it does help flavor a lot if you have ever pulled one right out of smoker still hot a tried it it’s very bland

    19 hours in smoker I did burnt ends too pic didn’t save lol but it was very good !

    Probably some snap chicken and pork butts to get the hang of tuning temps

    I take that back I did light my amps in box to see if any smoke leaked and none was coming out fb door
