Havent tried making one Cujun style yet. But I like some jambalaya. So I'm sure I would like it in a fattie as well.
The last few fatties I've made have been overstuffed as well. Seem to want to add a little extra to make it even better and overload the bacon weave.

Seems like a flavorful and fairly easy to make recipe.
Need to start cooking up more seafood. Around here it used to be a couple of $$ more per lb than beef. But over the last few years. Beef seems to have increased in price more than seafood has. Not that all fish costs less than beef.
Cheddar, pepper jack, mozzarella and extra sharp cheddar are my favorites.
So far, but I want to smoke some buffalo style cheese. I tried some from Costco a few years back (unsmoked) and really liked it. The addition of smoke would just add another dimension of flavor.
Not sure if Costco still...
While I'm happy with my progress as a cook. I see all of these great meals that are being made on this forum and can't wait to give them a try and become an even better cook\ pit master.

I've seen some posts about freezing milk gallon jugs and 2 liter soda bottles. I just fill up the water pan with ice in my camp chef smoke vault and replenish when it's all melted.
Do you have any Cajun rub? I like to use that and then apply a Frank's or other cayenne pepper sauce for the last 30min or so then a little more sauce while they cool off.
My last batch I smoked up was Colby Jack and pepper jack too.
Tried the Colby Jack as it was my fist time with that style of cheese and it turned out really good. I used cherry pellets.
Will have to try apple, as I haven't tried smoking cheese with that type of wood.
Are these 2lb blocks?

Fred Meyer stock's Kroger brands. So I'll have to swing bye the cheese isle and see if I can find it on sale.
