Weather warmed up around here for a couple of days and now it's supposed to drop in temperature and rain. The first few warm days of the year get me thinking about bbq. I could smell a few grills going yesterday when I was out walking the dog.

Got a Tomahawk in the freezer. Haven't been sure how I want to cook it up. I'm thinking your smoke and reverse sear is the way to go.

I've been wanting to try smoking up one of these for some time now. I think the first time I'd ever heard about Clod was when I was watching a food show and they mentioned Schmitty's in Lockhart TX.

WinCo cheese is cheaper per LB. The cheese they sell are in different sizes and weights. Quality wise they seem to be about the same.
I like winco's mozzarella. It smokes up well.
Tillamook cost a little more, but not much more and I do feel it's worth the $$. I find Tillamook to be a more flavorfull cheese than Kroger or the Winco brand cheese that I have smoked up.
My 2 favorite Tillamook cheeses are Pepper Jack and 2yr aged extra sharp cheddar
Not sure where you bought your Tri Tip at? But I have had good luck up here getting them at Fred Meyer. They seem to come up for sale quite often too. Tried a couple at WinCo and they just didn't seem to be as tender.
So I'd try to pick up my next tri tip from a different store and give it...
Wish I could find some good beef short ribs at the market like that.
One thing I need to do give them a try. As a kid I preferred beef to pork ribs.

I have seen these rib glazes but have never purchased them.
Simple syrup recipe that is posted looks really simple to make too.
