    BBQ sauce thickened?

So the question is how do you get your sauce to be more thick like something you would buy in the store? I have seen several home made sauces but they are more runny when compared to store bought brands. They still taste great but would like to thicken them up a bit. Any tricks?

    Purpose of Vents??

I am wandering the same thing. I have two side vents and one top vent. Last time I played around with the lower vents to see what would happen. I couldn't tell a difference. The only difference is that when I had them opened my wood chunks would let off more white smoke. When they are...

    a rib with a VIEW

Yeah kids have a way of getting what they want. Thanks for the replies. Do you think the amount of liquid in the foil would affect how tender they are? Lets assume that we are cooking 2 racks at the same time using the 321 and one rack I add no liquid and the other I add a cup. Will the one...

    a rib with a VIEW

Looks good. You mentioned that you thought they could have been better based on the pullback. How would you increase the pullback? It seems to me that you are using the 321 method? I guess I am just curious how one would increase pullback using the 321 method.

    Is carp crap?

I have never eaten it but I have always heard to make sure that you clean out the mud rings in them. I am not really sure what this means but they say if you get the mud rings out then they are good to go.

Cutting a pork but in half to save time cooking?

Last time I smoked some butts I got the twin pack at sams. I think I got two 7lbs so I decided to cut them in half. They were easy to cut in half and the cook time was less. I think for 15bls of total meat it took me about 9 hours to cook it. I couldn't tell the difference when eating it so...

    Rare chuckie

Thanks guys. That gives me a good start. Now I need to buy a chuck roast and a top round roast. Get some of both worlds in a smoke.

    Rare chuckie

Is there a list somewhere to find what is good for pulling and what is good to serve med-rare. I just got started and have only done pork so far but my wife wants some beef. I have looked at things but so many options for beef not sure where to start or what to buy for pulling and for slicing...

    Help w/Propane Smoker

What where the temps outside when you have used it? Windy? How are you monitoring the temp of the smoker. I have the same smoker and find that if it is windy I get some variation in temp but usually stays within my set range. If there is no wind then I am good to go once the water heats up...

    Master Forge smoker at Lowes

Yeah I got the perfect flame for 89 and haven't looked back yet. I have only had it for a couple of months but it has made some good butts and ribs so far. With that low of a price I was able to get an extra propane tank, another rack, and other great supplies. So far I am happy with it.

Smoke is done. Now cleaning up $^%^&*^

Not to hijack a thread but I have tried to foil the whole water pan and for whatever reason I get water build up then in the foil on the bottom of the water pan. When I move the pan the water comes out. How does one keep this from happening?

who's everyone rooting for this weekend?

If it wasn't for Favre I would root for the Viks but I don't feel like listening to the hype about Brett for 2 weeks. Plus I have always liked Brees since the Chargers traded him away and acted like he was nothing. So I will go Saints and Jets on this one. Don't really want to listen to the...

How to tell you maximized your wood potential.

So if I am understanding it right then with chunks of wood they should turn to white ash? I tried it with chunks of wood about the size of a golf ball and they pretty much turned to charcoal. On your GOSM do you keep the bottom vents open or closed? Do you cover the coffee can with foil or...

How to tell you maximized your wood potential.

Well another thread here got me thinking. What does wood look like after it is spent from smoking. I have a vertical propane smoker so was wandering what chips and chunks would look like after they were done producing smoke. I am new to the art but after using chunks for the first time they...

    First butt disaster

I have a perfect flame propane smoker from lowes. I had a thermometer right next to the meat and it was sitting pretty close to 225 the whole time. I ended putting the pork in the oven at 250 and it took another 6 hours to get it up to around 190. I then took it out and pulled it. It wasn't...

    First butt disaster

So I got up early this morning around 5 am. Got my pork shoulder out and let sit for a while at room temperature. I ended buying a picnic pork roast. I believe it is the lower section of the shoulder. Anyways I got my smoker up and running and held a steady 225 going up to around 250 and...

    Hi from the Burgh

I enjoy the snow in December and Jan. but when it drags into late Feb and March then it gets old. Thanks for the welcome. First smoke coming on Wed. Going to go with a pork shoulder around 8 lbs or so. Starting early in the morning so we will see how it goes. Will look around for a very...

    Hi from the Burgh

I just completed day 4 of the Ecourse. A lot of good info. I guess my main concern so far is my wood burning or is it doing what it should be? How do I know?
