    Well tomorrow's my little sisters birthday, figured it was a good excuse to smoke a brisket. Hopefully its a good move, and the family doesn't suffer too bad! Plan is to take her to 165-170 & foil then to 200 or so. The brisket. Decided to do a flat as the market had a nice one at 7.5 lbs...

    How long should smoke last?

    I ain't gonna flame about the sausage beer, sounds good! Never experienced longer burn time with smaller chips though. When there's chips and chunks in the pan, the chips are gone long before the chunks... Maybe I'm doin somethin wrong or thinkin of it the wrong way.

    Ah man, looks perfect. Wouldn't mind havin larger images of those 1st two, they're amazing, would make a great wallpaper. The saltwater fishin looks really cool, and I'll bet them rod holders work better than any you can buy. Thanks for sharin!

    Thanks Jeanie! Doubt anyone will try it, but I actually made it a couple times. Couple keys; maple or honey bacon, no seasoning, and take the time to make apple pie filling, sooooo much better than the stuff in the can!

    lol, thanks Dawn, not many people up here eat them, but they sure are good! Friends & I do a real cajun boil once or twice during the summer months, and they're awesome. Too cold to spread newspaper and throw one out on the picnic table right now, things would stick, but this'll get you by!

    Yeps, them be mud bugs, and they're goin in a fatty! Along with some corn, onion, rough chopped redskins, hot dogs, and a pile of shrimp! Cajun boil fatty! Had to roll the italian hot sausage thinner than a gallon zip lock bag would allow so I used freezer paper. Here's everything piled...
